Try this BANANA LOAF


J Stuff è
40g [1.5oz] Best Butter
40g [1.5oz] lard
110g  [4oz] castor sugar
1 egg
1 grated Orange rind--zest NOT PITH!(remove wrapper and sticker especially for your collection)
1 lemon (as above, oh...grate them finely!)
225g plain flour and 2 teaspoons baking powder [or you could use self raising flour]
4 Bananas, very carefully remove stickers then peel and mash to a pulp (the bananas!)
50g [2oz] shelled walnuts coarsely chopped (I don't think Walnuts have stickers?)

J This is what you do è
Prepare your New Wrappers and Stickers… then try the following…
Preheat oven to 180C / 350F / Gas Mark 4
Grease a 23cm x 13cm / 9 by 5 inch loaf tin
Cream butter with lard, add sugar and beat well; then beat in egg; add finely grated
Orange and lemon zesty rinds.
Sift flour with baking powder and mix in, along with mashed Banana and chopped walnuts.
Transfer mixture to loaf tin and fork it level. Bake for 50 minutes. Turn out onto a rack to cool, before slicing.

J Tips è
Use a food processor or electric whisk for quickness.  If you really want to share, the
Banana Loaf should give 8 good slices.
And if you don't
L it'll keep well in a bag in the fridge, or you could freeze it for later.
