Who he? He’s the character with two faces, one looking back, one looking forward, giving his name to the month January. Why raise that now? Well, we have been looking back at our best ever season for Vacherin Mont d’Or, with the most succulent, subtly flavoured cheeses for a long while – and it is not just us thinking so, because our December customers are coming back and telling us so. We had all that enjoyment, but what about something more to look forward to? A Swiss contact suggests that the beauties of this strictly seasonal cheese could be extended into the Spring and Summer months by freezing (?! – Shock! Horror!) but then we thought, why not? After all, we take the trouble to mature the cheeses we sell to the point where you can buy them and eat them with no more messing about, so, if frozen, they will thaw back to that point of perfection. So we did it – we have a small stock of frozen baby Vacherins (400g size) and a few of the slightly larger size sitting, waiting for your inspiration. We suggest you wait until we have a delivery of the wet garlic, “la Violette” from Cadours in the Spring, and then try the recipe of the month. Let us know how you get on!
