4 courgettes, medium size salt and ground black pepper 2 eggs 4tbsp flour parsley, chopped sunflower oil, for shallow frying grated cheese and salad, to serve
Peel and grate the courgettes, put them in a colander, sprinkle with salt and leave for 30 minutes to 1 hour. Drain and remove excess moisture by squeezing them with your hands. Put the courgettes, eggs, flour, parsley, salt and ground black pepper in a medium bowl. Mix well. Place spoonfuls of mixture into hot shallow oil and flatten each one with a spoon. Cook for 4-5 minutes until golden brown on both sides. Put each cooked slice on kitchen paper to absorb the excess oil. Place on a serving dish with salad, and sprinkle with grated cheese.
